Rubbery
Cheeses:
Mozzarella
A pale yellow Italian-style cheese traditionally made from Buffalo
Milk. Very mild in taste, with a medium fat content. Perfect for
melting - usually used for Pizza.
Bocconcini
A white Italian-style cheese with a distinctive fleshy texture.
You buy it in small balls and store it in water. It is very mild
in taste, and usually used as a salad, sliced and alternated with
slices of ripe tomatoes and fresh basil leaves, drizzled with a
good Extra Virgin Olive Oil.
Gouda
and Edam
Fairly sweet Dutch-style cheeses. Mild, and good for melting.
Gruyere
Yellow Swiss-style cheese with holes. Good for melting or serving
on a cheese platter.
Smoked
Although you can buy Smoked Cheddar, usually "Smoked"
cheese is flavoured processed cheese. As the name suggests, it has
a very distinctive smoky flavour and can be used for melting, in
sandwiches or on a cheese platter.
Havarti
Danish-style light-coloured cheese with small holes. Fairly distinctive
flavour, creamy texture and quite a high fat content. A good eating
cheese (as opposed to cooking).
