Cheesynut Clusters
1 Cup Savoury
Soya Nuts (or other low-carb nuts - see recipe)
1 Cup Shredded Cheese (eg matured Cheddar)
Spray a glass
or ceramic baking dish with non-stick spray (Cheese gets too hot
for plastic microwaveable containers). Mix the nuts and cheese thoroughly
and spread out on the baking dish. Microwave on high for 2-3 minutes,
until cheese browns. Quickly pour off any excess oil. If you take
too long to pour off the oil, it will reabsorb and make the clusters
very greasy. Cool, then break into lumps. Store in an airtight container
- will last a few days, if you can resist them :)
