Chili
Con Queso
(aka
Spicy Cheese Dip)
Onion,
chopped
Pure Olive Oil
Cheddar Cheese, grated
Cream or Evaporated Milk
Plain Flour
To
taste:
Garlic Cloves
Green Chilies (Fresh or Pickled, eg Jalepenos)
Pinch of Salt
Saute
the onions and garlic in the olive oil over a medium heat until
very soft. Add chilies and salt. Saute for a few minutes. Sprinkle
about a tablespoon of flour over and saute another minute or so
over a low heat. Add cream (or alternative), stir gently over low
heat until it thickens. Remove from heat, stir through the grated
Cheese and serve warm, with plain Tortilla Chips.
Note:
You can keep this warm with a fondue burner or candle-warmer, or
you can just stick it in the Microwave for ten seconds when it goes
cold.
