Tzaziki
(aka Cucumber and Garlic Dip)
2 Cups Natural
Yogurt*
1/2 Cucumber
To
taste:
2-6 Garlic Cloves
Dash of Pure Olive Oil
Pepper and Salt
Fresh Herbs (eg, Coriander, Parsley)
Crush the garlic
and drizzle with a little olive oil, then cook to sweeten (microwaving
it for a few seconds on a saucer is the quickest way). Remove the
seeds from the cucumber and peel if desired (depends on the variety
of cucumber). Grate or finely chop the cucumber. Stir together yogurt,
garlic and cucumber, then season with salt, pepper and fresh herbs
to taste.
Note: Serve
with crudites, flat-bread or biscuits. Great accompaniment to any
Middle Eastern food, or as a cooling raita with curries.
* Use low-fat
yogurt if you need to, although full-cream natural yogurt makes
a richer dip.
