Spaghetti
Bolognese
Vegetarian Mince (Dried or Frozen)
Red Wine
Sun-Dried Tomatoes
Chopped Tomatoes (Fresh and/or Tinned)
Tomato Paste
Italian Herbs to taste (Dried or Fresh)
Spaghetti
(low carb if you can get it)
Grated Cheese (eg, Parmesan, Cheddar)
Heat wine and
water in equal parts to boiling, then remove from heat. Add dried
or frozen vege-mince and cover to soak. Add all other sauce ingredients
and return to a low heat. Simmer until thick and rich, stirring
to prevent sticking.
Cook spaghetti
until al dente (still firm but no hard bits). Toss with a little
olive oil, spoon bolognese sauce over and garnish with grated cheese.
Note: Mushrooms
make a tasty addition. If using fresh ripe tomatoes, add them just
before serving for a great fresh taste.
