Other vegetables (eg: zucchini, potato, capsicum, mushrooms, leafy
greens, baby corn, bamboo shoots)
Saute the onions,
carrot and garlic. Add other vegetables in order of cooking time
required (potato may need pre-cooking). Add satay sauce, peanut
butter and water, then simmer to reduce. Add coconut cream just
before serving. Serve with steamed rice, garnished with fresh bean
sprouts and chopped peanuts.
Note: You can
make your own satay paste from soybean paste, garlic, ginger, chili,
corinader and other curry spices.
