Rocket and Shaved Parmesan Salad

Salad:
Rocket (Roquette) or another bitter salad-leaf
Fresh Parmesan, Romano or Pecorino, shaved

Dressing: To Taste
Olive Oil (preferably Extra Virgin)
Balsamic Vinegar
Lemon Juice, White or Cider Vinegar
Pinch of Salt
Pinch of Sugar

Shake dressing ingredients together in proportions to taste. Toss with Rocket and garnish with Parmesan and cracked Black Pepper.

Note: This very simple Mediterranean salad is also great with Goat's cheese.
