Thai
Tofu Salad
Salad:
Firm Tofu (pre-marinated is tastiest)
Peanuts, chopped
Two or more of the following:
Carrot, grated
Red Capsicum, finely julienned
Bean Sprouts
Cucumber, julienned or diced
Bamboo Shoots, julienned
Dressing:
To Taste (if desired)
Fresh Garlic, crushed
Fresh Coriander, chopped
Fresh Ginger, finely grated
Fresh Red Chilli, finely chopped, no seeds
Fresh Lemongrass, finely sliced
Lemon Juice
Soy Sauce
Sesame Oil
Shake dressing
ingredients together to taste. Blend with salad vegetables and put
in the fridge for a few hours for flavours to infuse.
Barbeque, grill
or pan-fry strips of tofu. Add to salad just before serving. Sprinkle
with chopped peanuts and a little drizzle of sesame oil.
Note: Always
be careful chopping fresh chilli, as you can burn your eyes. If
you can't be bothered with using fresh garlic, ginger, chilli and
lemongrass, you can use the "easy" jar versions. But only
fresh coriander will do for a Thai salad!
