Tomato Salad
Salad:
Fresh Ripe Tomatoes (Sliced)
Salad Onion (Red or White, very finely sliced)
Fresh Basil or Oregano Leaves
Capers (if desired)
Dressing:
Extra Virgin Olive Oil
Balsamic Vinegar (just a dash)
Garlic (Fresh or Roasted)
Arrange the
Tomatoes and Onion on a plate with the Herbs and Capers. Shake the
dressing ingredients in a jar. Drizzle dressing over the salad and
leave in the fridge a few hours for the flavours to infuse.
Note: Tomatoes
should be ripe but still firm - usually you have to leave them in
the sun for a few days to ripen, as they're sold before fully ripe
to prevent bruising.
