Sweet Potato Soup (Easy)

Potatoes (Orange-fleshed look best)
Potato (Mashing Variety) - optional
Garlic
1 Vegetarian Stock Cube
To Taste:
Natural Yogurt, Cream, or Soured Cream*
Curry Paste (your preferred type)
Fresh Coriander to garnish
Peel and dice
the sweet potatoes and potatoes, roughly chop the garlic. Simmer
with the stock cubes, a teaspoon of curry paste and water to cover
until the veges are soft. Puree. Add yoghurt or cream to taste.
Do not boil after adding yoghurt. Taste it and adjust seasonings
if required. If it's too thick (like baby-food) add a little boiling
water.
Serve garnished
with a drizzle of yoghurt and a generous amount of fresh chopped
coriander.
Note: * To make
a dairy-free or vegan version, you can skip the cream altogether
or use coconut cream, soy or rice-milk.
